Eggs Used by Manufacturers DownWASHINGTON - Jul 6/01 - STAT -- Shell eggs broken totaled 159 million dozen during May 2001, down 2% from May a year ago, according to the latest data compiled by the USDA. The quantity of eggs used by the food manufacturing industry so far this year is down 2.2% from last year at 729,518,000 dozen eggs. Regional percentage changes during May were: North Atlantic, down 14% at 21,567,000 dozen; North Central, up slightly at 116,710,000; South Atlantic, up slightly at 6,230,000; South Central, down 10% at 6,206,000; and Western, down slightly at 8,125,000 dozen. The USDA said production of whole egg liquid dropped 2.3% to 118,911,000 pounds; while 53,847,000 pounds of egg whites were produced and 28,383,000 pounds of liquid yolks. Inedible liquid output totaled 18,662,000 pounds, slightly ahead of the 18,344 pounds produced the same month last year.
