National Boxed Beef Cutout
   Boxed beef cutout values steady to firm on moderate demand and offerings. Select
and Choice chuck and round cuts steady to weak, while rib and loin cuts steady
to firm. Beef trimmings lower on light demand and moderate offerings.
   Estimated composite cutout value of Choice 1-3 600-900 lbs
carcasses up .65 at 160.20, 600-750 lbs carcasses up 140
at 160.69, 750-900 lbs up .42 at 161.29; Select 1-3 600-900 lbs
carcasses dn .02 at 139.29, 600-750 lbs up .12 at 140.35,
750-900 lbs up .14 at 139.48; based on 124.11 loads of Choice cuts,
104.60 loads of Select cuts, 11.34 loads of Trimmings, and
61.66 loads of coarse ground trimmings.

   The Cutter cow carcass gross cutout value was estimated at
111.30 up 1.84.

By-Product Drop Value
   Hide and offal from a typical slaughter steer was estimated at
8.15, unchanged.

National Carlot Pork
   Sales reported on 62.25 loads of pork cuts and 3.0 loads of
trim/process pork.
Compared to Friday's Close:    Fresh loins 4.00 higher; butts
steady; sknd hams 17-20 lbs 4.00-5.00 higher compared to last test, 20-27
lbs 1.00-2.00 higher; sdls bellies not established; lean trimmings 2.00
higher. Trading slow to moderate, with moderate to good demand and light
to moderate offerings.
   *Calculations for a 185 lb Pork Carcass 51-52 percent lean
0.80" -0.99" back fat at last rib.* **80.77 up 1.20**
