Cheese Output Up, Butter Off in 2003WASHINGTON - Apr 28/04 - SNS -- Dairy product output was little changed in 2003, with minor increases in cheese output helping offset a significant decline in butter production levels, judging from the USDA's annual dairy product report. Total cheese production, excluding cottage cheeses, was 8.60 billion pounds, 0.6% above 2002 production. Wisconsin was the leading State with 26.5% of the production. American type cheese production was 3.67 billion pounds, 0.6% below 2002 and accounted for 42.7% of total cheese in 2003. Italian varieties, with 3.52 billion pounds were 1.5% above 2002 production. Mozzarella accounted for 79.7% of the Italian production followed by Provolone with 8.0% and Ricotta with 6.6%.
