Red Meat Output Beneath Last DecemberWASHINGTON - Jan 23/09 - SNS -- Commercial red meat for the United States totalled 4.16 billion pounds in December, up 3% from the 4.06 billion pounds produced in December 2007, reveals today's USDA data. Beef production, at 2.08 billion pounds, was 1% above a year ago. Cattle slaughter totalled 2.67 million head, up 1% from December 2007. The average live weight was up 1 pound from the previous year, at 1,303 pounds. Veal production totalled 13.3 million pounds, 28% above December a year ago. Calf slaughter totalled 94,100 head, up 54% from December 2007. The average live weight was down 43 pounds from a year ago, at 245 pounds. Pork production totalled 2.05 billion pounds, up 4% from the previous year. Hog kill totalled 10.14 million head, up 5% from December 2007. The average live weight was down 2 pounds from the previous year, at 270 pounds. Lamb and mutton production, at 15.4 million pounds, was up a little from December 2007. Sheep slaughter totalled 230,800 head, 1% above last year. The average live weight was 134 pounds, down 1 pound from December a year ago.
