Boxed beef cutout values were generally steady on moderate demand and
offerings. Select and Choice chuck and round cuts were steady to firm while rib
and loin cuts were steady to weak. Beef trimmings were generally steady on
moderate demand and offerings.
Estimated composite cutout value of Choice 1-3 600-900 lbs carcasses dn 0.11
at 158.30; Select 1-3 600-900 lbs carcasses up 0.05 at 152.05; based on 139.92
loads of Choice cuts, 113.08 loads of Select cuts, 31.84 loads of Trimmings, and
