Record Cheese Output in CaliforniaSTOCKTON - Feb 8/06 - SNS -- Cheese production in California reached a record 2.14 billion pounds in 2005, according to a preliminary report by the California Department of Food and Agriculture (CDFA), as output rose 7.1%, compared to a U.S. national increase of just 2.6%. Cheese production in California has more than doubled from 1.04 billion pounds in 1996. Feeding this increase was a jump milk output in the state to a record 37.5 billion pounds last year, up 3% from 2004. Nearly half of California's milk supply goes to cheese production. Today, California has several of the world's largest cheese plants and produces one out of every five pounds of cheese made in the U.S.
