Slight Gain in Egg Manufacturing UseWASHINGTON - Mar 2/01 - STAT -- The quantity of eggs used by food manufacturers rose slightly in January, according to the latest data compiled by the USDA. Shell eggs broken totaled 144.59 million dozen during January 2001, up slightly from the 143.97 million used in January a year ago. Regional percentage changes were: North Atlantic, up slightly at 23,676,000 eggs; North Central, up 1% at 102,364,000; South Atlantic, up 4% at 5,496,000; South Central, down 12% at just 5,629,000; and Western, up 3% to 7,423,000 eggs. Manufacturing activity involving eggs in January yielded 109,309,000 pounds of whole eggs, 46,147,000 of whites, 27,3232,000 pounds of yolks, and 17,942,000 pounds of inedible liquid.
